Sweet, caramelized plantains baked until golden and tender

Hi! I'm Sabrina. I spend my days working in fintech, but my true love language has always been cooking, baking, and hosting.

There are countless ways to make sweet plantains (or plátanos maduros). You can fry them in a skillet or cook them in an air fryer. And, if you look online, you're sure to find dozens of different versions of this recipe. But this is the method I grew up with and the one my mama taught me.
It's simple, hands-off, and produces sweet, golden plantains with caramelized edges and a soft, buttery center every time. Let's not overcomplicate this life. ;)
Buen provecho!

Preheat the over to 400 degrees Fahrenheit.
Cut the ends off of your plantains and slice down the side of the peel.
Gently remove the peel.
Cut the peeled plantains into 1-inch thick diagonal rounds.
Brush with olive oil on both sides.
Place on parchment paper and bake for 30 minutes.
If you want to turn them over mid-bake, feel free, but it's not necessary.
Make sure the sides are golden brown before removing from the oven.
