I was filming this Honey Garlic Chicken recipe and didn’t realize I’d captured one of my favorite little moments until I finished the edit.
The cutest, tiny voice in the background reminding me that the best part of cooking is always the company of my 3-year-old boy.

Place the sliced onions at the bottom of your slow cooker.
Arrange the chicken thighs on top.
Add a pinch of salt to the chicken thighs.
In a small bowl, whisk together the coconut aminos, apple cider vinegar, sesame oil, honey, garlic, and black pepper.
Pour the sauce over the chicken, making sure each piece is well coated.
Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours, until the chicken is tender.
If you'd like a thicker sauce, transfer the cooking liquid to a saucepan. Whisk in arrowroot powder or cornstarch and simmer over medium heat for 5 to 10 minutes, stirring until it becomes glossy and slightly thickened. Return the chicken to the sauce and toss to coat.
Serve over jasmine or brown rice, with plenty of the sauce spooned over the top.
